Heat, heat. Want nothing. Just think about how and what to cool. On hot summer days, when you don’t feel like anything, treat yourself to a plate of chilled soup – okroshka. It will not only saturate and remove thirst, but also leave behind an unforgettable feeling of coolness. This dish will take no more than 30 minutes to prepare. All you need to do is cut and pour. And the dish is ready.
For summer okroshka you will need:
Radishes – 10 pcs.,
Cucumbers – 2 pcs.,
Boiled potatoes – 2-3 pieces.,
Boiled sausage – 100-200 gr. (optional),
Greens,
Salt,
Kvass (optional kefir, mineral water with lemon juice).
Rinse potatoes, boil in salted water. Peel cooked potatoes and cut into small cubes.
Rinse radishes. If the radish is bitter, peel it. cut into cubes.
Clean cucumbers can also be cut into cubes, but it is advisable to rub them on a coarse grater. This will give the okroshka more flavor.
If you decide to add boiled sausage or ham. It should also be cut into cubes, only smaller than vegetables.
Choose the greens you like best. Finely chop it.
Onions are also better to add green, onions will give a bitter taste.
Pour the dish with the ingredients listed above. If you chose kvass. You will need 1 liter. Okroshka with kvass served with sour cream.
If it’s kefir. Then add a small amount so that it is not very thick. With kefir okroshka it turns out quite thick.
If it’s mineral water. You need to release gas and squeeze the juice of one lemon. Get a nice lemon water.
Salt to taste and refrigerate.
Cold okroshka can be served at the table.
