For a home baker, that probably does not matter. In a dessert shop preparing dozens of drinks and toppings through a busy afternoon, it does.

I would not choose it simply because the capacity is bigger, though.

For a busy kitchen, the useful question is not “How large a cylinder can we buy?” It is how much cream the team actually produces between opening and closing. Once you know that number, choosing between 8g, 615g or a larger tank becomes much easier.
A useful way to decide is to run a one-week usage check. Record how many dispensers are prepared, when the busiest preparation periods occur, and how much product is left at closing. Include the time staff spend changing cartridges and cleaning the connection equipment. That simple record shows whether a larger format would remove a real bottleneck or merely add capacity. The kitchen should also decide who receives, stores and checks each cylinder so that stock rotation and handling remain consistent across shifts.
